Delicious Healthy Banana Blueberry Almond Muffin Recipe

If you need a simple and healthy muffin recipe that is great for breakfast or a sweet treat, look no further. Just like my workouts, this recipe takes less than 30 minutes. I love to bake a couple of batches and then freeze some for future use.

These muffins are a family favorite at my house! Whenever I make them, they don’t last long. My kiddos love to help me bake them, and of course, they enjoy eating them even more. It’s always such a fun time in the kitchen, and I can’t tell you how much joy it brings me to see them getting involved. These muffins are the perfect way to share a healthy treat that everyone can enjoy together.

Banana Blueberry Almond Muffins

Carbs: 13g | Fat: 13g | Protein: 5g | Calories: ~190/muffin

Makes about 12 muffins

Ingredients:

    •    2 cups almond flour

    •    2 eggs

    •    1 ripe banana, smashed

    •    ¼ cup maple syrup

    •    1 tsp baking soda

    •    1 tbsp apple cider vinegar

    •    1 tsp vanilla extract

    •    2 tbsp olive oil

    •    1 cup frozen blueberries

    •    2 tsp cinnamon

Instructions:

    1.    Preheat the oven to 350 degrees and line muffin tin.

    2.    In a large bowl, mix all the ingredients together until smooth.

    3.    Pour the mixture into each muffin tin.

    4.    Bake for 25 minutes or until muffins are golden brown.

    5.    Allow 5 minutes for cooling. Eat and enjoy!

These muffins are great as a side with your breakfast or a grab-and-go snack during the day when you need some extra energy. I love using almond flour versus regular flour in my baking recipes. It’s less processed and provides more nutritional benefits. Almonds are boiled for skin removal, ground, and sifted to create the flour, making it a very minimally processed ingredient. You get healthy fats in this recipe, which are so important for our bodies.
